Чтобы Open server пустил вас в phpMyAdmin и не выдавал ошибку «Вход без пароля запрещен при конфигурации (смотрите AllowNoPassword)» нужно сделать следующее.

1. Перейти в папку с сервером. C:\openserver у вас может быть и другой диск.
2. Не буду расписывать все папки напишу вот так C:\openserver\modules\system\html\openserver\phpmyadmin там нужно найти файл под названием config.inc.php и в нем найти строчку $cfg['Servers'][$i]['AllowNoPassword'] и выставить значение true

   $cfg['Servers'][$i]['AllowNoPassword'] = true;

Бывает такое что данного файла нет, но есть файл под названием config.sample.inc.php из которого нужно скопировать все содержимое и создать файл config.inc.php с этим содержимым. Но иногда случается и такое что этого файла тоже нет, тогда вот вам содержимое, но знайте что в этом случае, вам нужно будет каждый раз добавлять этот файл при отключении сервера.
